Default Want to swap recipes for easy cheap but nutritous meals?

Hi,

I was thinking, we are all skint, we all have too little time (or energy) to slave away in the kitchen yet we have to eat, and in some cases have a family to feed too. Everybody has a few recipes of their own that they end up overusing because it's easy and the ingredients are cheap so how about we swap ideas and increase our repetoire??

Here's mine:

Pasta with easy tomato sauce. (Serves 2 adults and two young children but easily altered for less or more people).

Fry 1 red pepper, chopped, or (easier still) a few handfuls of frozen chopped peppers in a wok or large saucepan.
Add 2 tins of chopped tomatoes and a handful of fresh basil leaves or tablespoon of dried basil and heat until warm throughout. Voila. it's as easy as that! Serve with pasta.
Add grated cheese if you like.
You can also add some bacon lardons, or diced chicken/turkey breast at step 1 if liked; or add strips of ham with the tomatoes and basil.
If you like it hot, add a fresh chilli or chilli powder at step 1.
You can up the veg content with mushrooms, or anything you fancy, you can even add frozen sweetcorn or peas, oh the possibilites are endless....

Cheese on a plate ....

does what it says on the tin...

Put some cheese on an ovenproof dish, sprinkle some milk over it. bake in the oven on 200 until cheese bubbling and turning brown and crispy...

serve with bread and butter, and dip away!! GORGEOUS...

something i like is roasted vegetables. Put sweet potato, butternut squash, onion, pepers, parsnip, carrot and courgette into a roasting dish with olive oil, black pepper, cook until cooked lol(optional for a bit of spice put some cummin and coriandar over towards the end of cooking). Then either put in raps or in a ciabatta roll or bagette with some rocket. also try putting houmous on the wraps or bagette!! very easy, cheap and healthy!!xx

Rice surpise - Basmati rice and loadsa veggies, scrambled egg and the meat of your choice!!! Done in 10-15 mins and beautiful!!

My fave has to be bacon pasta bake..

cook some pasta
grill some bacon on george foreman catching fat
Cut bacon in bits
Add tin of chopped tomatoes
Add bacon fat.. yumm
Some boiled/fried/microwaved mushrooms
Shove in an oven dish
cover in cheese
Cook on Mark 4/5 til cheese is melted and you're ready to eat it!
